Soaked silver ear mushroom, 2-3 pieces 银耳
½ chopped apple 苹果
1 chopped pear 雪梨
2 tbsp Goji berries 枸杞
Honey or sweetener of choice， to taste 蜜糖/增甜剂
A splash of almond milk 杏仁奶

Soak silver ear mushroom overnight or for at least 3 hours. They will expand significantly.
Chop both apple and pear into pieces. Break up the rehydrated mushroom into pieces.
In a pot, add mushrooms, apple, pear, goji berries, tonic bag and water to cover.
Bring to a boil and take out the tonic bag. Cook for at least another 30 minutes until everything is soft. Option to slow cook in a rice cooker or clay cooker. It's the best to cook until the snow fungus is very soft and not crunchy at all.
Before serving, add sweetener and almond milk. Taste and adjust.
