Sweet Chinese Yam Soup with Corn and Ghee 酥油山药玉米羹

1.25 (240g) of Chinese yam 山药
1.5 Tbsp (15g) of raw almond 杏仁
2 cups (350g) of Corn kernels 玉米
1 Dampness Reducing Culinary TCM Tonic Bag 祛湿药膳包
2-3 cups of water 水
1.75 tsp (25g) of Grass-fed ghee 有机印度酥油
1 Tbsp (12g) brown sugar, or to taste 红糖
Soak the almonds for at least 1-2 hours and drain. Dry-roast in a pan and chop into smaller pieces.
In a pot, bring 4 cups of water to boil, and steep 1 tonic bag for 10 minutes.
Meanwhile, peel Chinese yam and dice into small pieces.
Heat ghee in a pot; add corn, almonds, and yams; sauté for 1-2 minutes.
Cover all ingredients with tonic water and bring to a boil.
Turn heat to medium-low and cook until the soup becomes thicker.
Add brown sugar and mix well. Taste and adjust.
