A versatile, basic dip that can be paired with all kinds of bread and vegetables. We’ve added lotus seeds for its spleen and kidney nourishing qualities.
Calming White Bean and Lotus Seed Dip | 白豆莲子小碟

1 can of cannellini beans, drained 白腰豆
1 cup cooked lotus seeds (without the center green hearts) 莲子
½ cup roasted red pepper 红椒
3 garlic cloves 大蒜瓣
⅓ cup of extra virgin olive oil 橄榄油
⅓ cup of tahini 白芝麻酱
2 tsp sea salt 海盐
1 lemon, juice and zest 柠檬皮和汁
Drain water from canned cannellini beans.
Wash lotus seeds and boil in water, until it is soft.
Drain cooked lotus and let it cool to room temperature. Then remove the hearts.
In a blender, blend all ingredients together until smooth.
Taste and season.
Ready to serve. Enjoy!
