TCM Inspired Avocado Toast
Boil coix seed in water until they are soft. Around 30-40 minutes. Add in goji berry in the last 5 minutes of cooking.
Preserve cooking water and drink as a beverage. Keep the solid content to use later.
Mash the avocado with cilantro, scallion, lime juice, and season with sea salt as needed.
Toast rye, buckwheat, or other whole wheat toast.
Spread the avocado mash on the toast, top with roasted mushrooms (if using), cooked coix seed and goji. Season with sea salt if needed.
