We've never been into making cute food for Halloween, as it’s often laden with artificial colors, sugar, and additives, but we are all for the celebratory spirit! So, we made the team a bowl of pumpkin-seaweed porridge for breakfast. The logic behind why this is perfect for Halloween—the seaweed is kind of scary looking and Japanese Kabocha pumpkin is for sure in line with the holiday.

Pumpkin and Seaweed Multi-grain Porridge for Autumn | 秋日南瓜紫菜杂粮粥
VEGAN | GLUTEN-FREE | NUT-FREE

½ cup rolled oats or short-grain rice
1 cup chopped Japanese Kabocha pumpkin or canned pumpkin puree
Extra Virgin Camellia Seed oil, or cooking oil of your preference
1-2 tsp of minced ginger
5-6 cups of broth made from the Dampness Reducing Culinary TCM Tonic Bag or nut milk
2-3 tbsp shredded, dried seaweed of choice, such as hijiki, seaweed sheets for sushi, and purple seaweed
2 tsp honey or maple syrup
Sea salt or miso paste to taste
Pinch of white pepper
Splash of soy sauce
For broth: bring two Dampness Reducing Culinary TCM Tonic Bags and 6 cups of water to a boil, then simmer on medium-low for 20 mins.
If using raw pumpkin, boil and mash the flesh until it forms a thick puree-like texture. I added some broth and blended mine in a blender for a smoother texture.
In a pot, sauté ginger in camellia seed oil until fragrant. Option to add some other chopped vegetables here, such as mushrooms.
Rinse the grains. Add to the pot.
Add liquid of choice and shredded seaweed. Stir and bring to a boil.
On medium-low heat, cook the porridge until all grains are soft and ideal consistency is reached. Add more liquid if it is too thick and cook longer if it is too thin.
Season with sea salt or miso, soy sauce, honey or maple syrup, and pepper.
