Masterchef, Fred Chang, designed this beautiful mosse tart, pulling from three different threads of inspirations. The first was fruit cake, the second, eggnog, and the third, snow. He opted for a rum spiked short crust tart, knowing the alcohol in the rum would evaporate and create a flakier finish. For his filling, he went with buckwheat frangipane.
