Olive oil cake is a simple, elegant, and delicious. Here at Five Seasons TCM, we've added a dampness-reducing blend of lotus seed, coix seed, and fu ling to the batter for their wonderful medicinal benefits. Naturally dairy-free, this cake is so easy to make! We pair it using a unique currant compote made with goji, jujube, and red currant.
TCM Olive Oil Cake with Currant Compote | 黑醋栗蜜饯橄榄油蛋糕

2 tbsp each of lotus seeds, coix seeds, and fu ling 莲子，薏苡仁，茯苓
2 cups all-purpose flour 中筋面粉
1 1/4 tsp baking powder 发酵粉
1 cup granulated sugar 砂糖
3 large eggs 鸡蛋
1 tsp sea salt 海盐

1 cup of extra-virgin olive oil 特级初榨橄榄油
1 ¼ cups water or oat milk or regular whole milk 燕麦奶/全脂牛奶
1 tbsp of vodka (optional) 伏特加酒
2 tbsp fresh lemon juice 柠檬汁
1 tsp grated lemon zest 柠檬皮
⅓ cup of goji berry, presoaked 枸杞
½ cup of chopped jujube, pitted and pre-soked 枣子
2/3 cup of fresh red currant 红醋栗

Preheat oven to 375 degrees. Grease a 9-inch round cake pan using extra-virgin olive oil and line the bottom with parchment paper.
Grind lotus seeds, coix seeds, and fu ling into fine powder.
Combine all dried ingredients together in a large mixing bowl.
In another bowl, combine all wet ingredients well. Beat eggs first.
Add wet mixture to dried and combine. Do not over mix.
Bake in the middle rack for about 45-60 minutes until the top is golden and crispy. Adjust based on your oven.
Meanwhile, make the compote. Meanwhile, make the compote. Steep the tonic bag with water for about 15 minutes. Remove the tonic bag.
Add all ingredients with the tonic water in a small sauce pot and cook until soft and more than half of the liquid is evaporated. The amount of sugar is very flexible, depending on your taste.
Once the cake is fully baked, top with compote and cream. Serve warm is the best.
