Muffins and many other baked goods tend to cause yin-deficiency and excessive heat in our body due to the drying cooking method and high amount of refined sugar, dairy, and fat. In this unique recipe, we added pear and chrysanthemum, two amazing yin-nourishing and cooling ingredients in TCM to give muffins a more balanced energetics. Nonetheless, they are still delicious and taste like a regular muffin!
Pear Chrysanthemum Muffins |菊花梨子麦芬

1 cup all-purpose flour 通用面粉
2 cups whole-wheat flour 全麦面粉
⅓ cup dried chrysanthemum 菊花
¼ cup dried goji berries 枸杞
¼ cup granulated sugar 砂糖
½ cup brown sugar 红糖

¼ teaspoon ground nutmeg 豆蔻粉
½ teaspoon salt 盐
½ cup 2% milk or nut milk of choice 2%脱脂奶/果仁奶
1 stick of unsalted butter, softened 无盐奶油
2 large eggs 鸡蛋
2 cups of peeled, chopped fresh pear 梨
Cook chrysanthemum and tonic bag in the milk. Bring to a boil and then let cool completely. Strain the petals to obtain herbal milk.
Preheat your oven to 400 degrees. Line muffin pan with muffin tins. Option to add non-stick cooking spray.
Place dried goji berries in water and let soak until softened (about 10-15 mins). Strain and set aside.
In a mixer on high speed, cream together the sugars and butter until they resemble a frosting consistency, about 1 minute.
Mix the eggs, one at a time until fully incorporated, about 1 minute each.
In a separate medium sized bowl, whisk together the flours, nutmeg, and salt. Mix on low speed, adding in about ⅓ cup flour into the butter/sugar mixture at a time, followed by 1/3 cup of chrysanthemum milk. Continue altering between the flour and liquid, mixing until fully combined. Do not over mix this!
Scrape the sides of your bowl with a spatula and stir gently to incorporate the last of the flour.
Add in the diced pears to your batter with chrysanthemum petals all at once and fold them into the batter.
Divide your batter into the muffin tins and let the batter fill the cups and mound slightly at the top. Option to sprinkle tops with your softened goji berries.
Let bake for 20 to 25 minutes, rotating the pan once in the middle of baking. You will know your muffins are ready to come out of the oven when the tops are split and golden looking, and when a toothpick inserted in the middle of a muffin comes out looking clean!
Take the muffins out of the oven and let them cool enough to handle, and then transfer them to a wire rack to finish cooling. Once cooled, you are ready to serve!
