Box of Dreams: A Mousse Tart

Masterchef, Fred Chang, designed this beautiful mosse tart, pulling from three different threads of inspirations. The first was fruit cake, the second, eggnog, and the third, snow. He opted for a rum spiked short crust tart, knowing the alcohol in the rum would evaporate and create a flakier finish. For his filling, he went with buckwheat frangipane. Frangipane is normally an almond cream that is baked, and has a cakey-texture to it.
