Peach resin is the natural resin secreted from bark of the peach tree, formed in amber like crystals on the tree, about the size of a walnut. The gum crystals are a traditional dessert and an excellent skin tonic that clears the blood and cures pimples and acne. It harmonizes the spleen and stomach, tonifies and activates the blood, replenishes Qi and alleviates pain. It also helps to promote bowel movement and makes you feel more satiated, helping to decrease food intake, supports weight control and removes waste. It is suitable to make soup and sweet soup.

Black Sesame Chickpea Pancake with Goji-Apple Compote | 黑芝麻鹰嘴豆松饼配枸杞苹果酱

This TCM-American fusion recipe is designed for winter months to nourish our kidney meridian system. It is naturally gluten-free and vegan, and a perfect option for a weekend morning. Although chickpea flour is not considered a conventional Chinese ingredient, it is actually grown natively in Yunnan, China. The locals call it “Ji Dou 鸡豆,” meaning “chick bean” in Chinese. It is traditionally used to make jelly noodles called “鸡豆凉粉.” I’ve had wild black chickpeas when I was traveling in Yunnan. They were so delicious!

1 cup chickpea flour 鹰嘴豆粉
1/4 tsp sea salt 海盐
1 1/2 tsp baking powder 泡打粉
1/3 cup black sesame powder 黑芝麻粉
1 tsp charcoal powder (optional, for color) 活性炭粉
1 tbsp sweetener of choice 糖
coconut oil, as needed 椰子油
water or nut milk, as needed, around 1-1.5 cup 水或植物奶
osmanthus, optional 桂花
1 apple of choice, chopped 苹果
1/2 cup pre-soaked peach gum* 桃胶
1/3 cup of dark brown sugar, or as needed 红糖
1/3 cup of goji 枸杞
2 cups of water: for compote and for batter mix 水
*if you do not have peach gum, you could skip it or add some starch/pectin. I would really recommend the peach gum here because it really adds an interesting texture and health benefits to the pancakes. Best to soak it overnight!
For Goji-Apple Compote
To make Compote
Soak your peach gum over night. Rinse and remove any naturally occurring debris before using.
Add chopped apple, soaked peach gum, sugar, goji to a pot. And enough water to cover the ingredients.
Cook until everything is soft and turns into a denser compote texture. Add more water if needed.
To make Pancakes
Mix all dry ingredients together. Add water slowly until it forms a thick yet spreadable batter. I added osmanthus flower to the batter, but this is optional.
In a pan, add coconut oil. Add pancake batter and spread outwards to make a circular shape. Flip after 3-5 minutes per side.
Stack the pancakes and top with the compote and osmanthus if you have! Bon appetit!
