This light cake recipe is adapted from a seasonal Chinese dessert for the spring called 朴籽粿, which translates to Pu Zi Steamed Cake for its use of Pu Zi leaves for its green color and detoxing function. Our recipe uses Jie Cai as an alternative, you can also use any other fresh green leaves that is available to you.

4-Ingredient Sweet Steamed Cake | 蒸米糕 / 朴籽粿

1 cup of Rice flour (240g) 粘米粉
1 tbsp of Baking powder (15g) 泡打粉
1 cup of Water (240g) 清水
2-3 cups of fresh green leaves 新鲜绿叶
2 tbsp (30g) of sweetener (Monk fruit/Stevia sugar) 甜味剂（罗汉果/甜菊糖）
Mix all rice flour and baking powder together in a bowl.
Add fresh green leaves and water into the blender and blend them together.
Strain the green juice into the mixture and mix everything until smooth.
Pour the batter into molds or bowls.
After water boils, steam cake on high heat for about 20 minutes.
